Hide the meat grinder so that you don’t tempt you today to make classic ground. Try the recipe for pork chops like a grandfatherand you will delight all household members – older and younger. It is better to sharpen the knife well, because it will be very needed. To conquer the taste of chopped cutlets, use your favorite fresh or dried herbs and prepare a quick garlic sauce.

You need to make this recipe:

  • 7-8 slices of pork,
  • 1 white onion,
  • 1-2 teaspoons of mustard (adjust the level of focus by taste),
  • 2 tablespoons of Greek or natural yogurt,
  • 1-2 eggs,
  • 4 tablespoons of potato flour (or 2 tablespoons of corn and 2 potato),
  • 1 tablespoon of favorite, chopped herbs, e.g. parsley and dill,
  • salt and pepper to taste,
  • oil or lard for frying,
  • 2 tablespoons of mayonnaise,
  • 1-2 cloves of garlic.

Beat the meat like classic pork chops to break the fiber structure. Then cut the pork loin into small cubes with a sharp knife. Peel and finely chop the onion and greens. Place all ingredients in a bowl. Then, stick the egg (start with one), add flour, mustard, yogurt and spices and mix thoroughly. If necessary, stick one more egg or add more flour. Set aside the bowl for 10-15 minutes so that the meat mass structure becomes more compact.

Heat oil or lard in a frying pan. Get a spoon of meat portions, form chops in your hands and put on hot fat. Fry pork chop on two sides so that they are browned and put into a pot closed with a pot to keep them warm.

Mix the mayonnaise with garlic squeezed by Prague. You can additionally season with salt and pepper. Put the cutlets on a plate, pour them with sauce (or serve separately) and serve with your favorite additions. Furned potatoes and beetroot or cucumber salad will work great.
