Cheese dumplings it’s a perfect alternative to donuts for a carnival party. Cottage cheese dough, unlike yeast dough, does not have to rise. They are prepared very quickly and without any problems. Cheese donuts are in no way inferior in taste to classic donuts, and they have the advantage over them that they stay fresh longer.
To make this recipe you need the following ingredients:
- 500 kg of semi-skimmed cottage cheese,
- 4 eggs,
- 3 tablespoons of sugar,
- about 300 g of cake flour,
- 1 teaspoon of baking soda,
- 1 teaspoon of spirit,
- oil (for frying),
- powdered sugar (for decoration).
Grind the cottage cheese twice in a meat grinder – through a small-mesh strainer. Bring the eggs to room temperature. Grind with sugar.
Sift flour and baking soda into the eggs. Mix. Combine with cottage cheese and knead into a uniform dough. At the end of kneading, add spirit to the dough. The dough may be a bit sticky, but it should be compact. On a floured board, roll out the dough into a thick (1.5-2 cm) cake. Use a glass (also dusted with flour or greased to prevent it from sticking to the dough) and cut out circles from the dough. Make a hole through each one (e.g. with the handle of a wooden spoon). Knead and roll out the dough remaining after cutting out the doughnuts. Cut out donuts until you run out of dough.
Fry the cheese rings in batches in deep oil heated to approximately 180°C. Fry on both sides until golden.
Place the fried doughnuts on a paper towel to absorb excess fat. When the donuts cool down, sprinkle them with powdered sugar.
