Let us make a Haná cure salad, a little modernized, but still faithful to its tradition. This version of the salad is not just about acidity and crispy, but about the balance of taste that will get you.
Start with red cabbage. Wash it, cut into thin strips and put in a bowl. Salt. Red cabbage is not just a healthier variant of classic cabbage, but the salad will be nicely colored. Now take two apples, ideally the crunchy and a little sour.
Grate them finely and add to the cabbage. This combination of flavors is absolutely great, the sweetness and acidity of the apples perfectly complement with finely salted cabbage. Mix everything gently with your hands to combine the ingredients and relax the juice.
Instead of heavy mayonnaise watering, reach for sour cream. Put 150 g of sour cream in a small container, one tablespoon of oil, two small teaspoons of wine vinegar, a pinch of salt, freshly ground pepper and a little sugar. Mix everything until smooth watering. If you like a stronger taste, you can add a little more vinegar or sugar depending on how you like it. Then gently mix the dressing into cabbage and apples and let it rest for a while so that all tastes are beautifully connected.
And now you just need to serve. This salad is ideal not only as a side dish to roast meat, but also as a separate meal when you want something light but nutritious. And because cabbage is full of fiber and vitamins, you will not only feel but also fill energy.
