To prepare this recipe, you will need:
- 1.5 liters of water,
- 3 tablespoons of vegetable broth concentrate,
- 4 potatoes,
- 2 carrots,
- a piece of celery root (about 75 g),
- ¼ of Chinese cabbage,
- 1 green pepper,
- 2 cloves of garlic,
- 1 small onion,
- 2 tablespoons of butter,
- 2 grains of allspice,
- 1 bay leaf,
- a small bunch of dill,
- a pinch of sugar,
- Salt, pepper (to taste).
You can eat the finished soup, or get it a slice of fresh bread. Crunchy croutons will also fit well here.
Peel potatoes, carrots and a piece of celery. Cut the potatoes and carrots into cubes. Cook the vegetables in half a slightly salted water with the addition of allspice and bay leaf. It will take about 10-15 minutes. Chat the cabbage. Cut the peppers into small pieces (remove the seed nest). Pour the rest of the cold water. Add some salt and a pinch of sugar. Boil. Cook for about 5 minutes from the moment the water contains. Finely cut the onion and cut into cubes. Chop garlic. Fry the onion in butter. At the end of frying, add garlic.
Drain a decoction with root vegetables. Leave a piece of celery in it. Transfer vegetables from a pan (along with all the butter). Blend the contents of the pot. Add the broth concentrate and boil again. When the decoction boils, pour all the contents of the second pot into it. Add the carrots and potatoes back. Cook for a while. Season to taste with salt and pepper. Serve the soup with a finely chopped dill.
