We start with the preparation of the dough. Add a tablespoon of sugar, half a fresh yeast cube and a pinch of salt to half a kilogram of smooth flour. Add a little warm water to the yeast and do the sourdough. Then add two eggs, one lemon bark to the flour and one tablespoon of rum.

Rum gives the dough a fine aroma and significantly contributes to its suppleness. Mix all ingredients carefully and start to knead until the dough is smooth and elastic. The kneading should take about ten minutes, but if you feel that the dough needs more moisture, add a little warm milk.

Now cover the bowl with a cloth and allow the dough to rise in a warm place for about an hour until it has its volume. As soon as the dough leaves, move it to the work surface sprinkled with a little flour and roll it on a plate of about 2 cm thick. Use a glass or mold to cut the wheels and put a spoon of plum in their center. Fold the edges of the donut and gently press the filling to stay inside.

When it comes to frying, use quality lard. Traditional recipes recommend this fat, because donuts give the exceptional taste and crispy structure. Heat the lard to medium temperature and start frying donuts.

Make sure the temperature is correct. If the lard is too hot, the donuts will be burnt from outside and raw inside. Fry the donuts on both sides until golden, approximately 2-3 minutes each side. After frying, let them drain on a paper towel to get rid of excess fat.

Finally, wrap them in powder sugar and if you want, you can sprinkle them with a little vanilla sugar for extra scent. The donuts prepared in this way are fluffy, fine and full of excellent fillings.
