Regional dishes are something that we definitely have a weakness for – one of them is pierogi nobles, which are very popular in Mazovia and Podlasie. Their secret is stuffing of potatoes, onions and bacon. Extremely aromatic, it just melts in the mouth. It is also extremely full -bodied, so after eating these dumplings, no one will be hungry.
Pierogi nobles are inscribed on the list of traditional products – in the original version they are larger than traditional dumplings, the filling is primarily beaten and fried potatoes. They also have a unique taste thanks to the abundant lard of chubby and bulbs.
We propose to test the following recipe, which you can adapt to your preferences.
The following ingredients will be needed to prepare that day:
Cake:
- 300 g of wheat flour,
- a spoon of butter,
- 150 ml of hot water.
Stuffing:
- 600 g of potatoes,
- onion (large),
- 200 g of bacon,
- sun,
- pepper.
Embellishment:
- 300 g of smoked bacon,
- Onion (large).
Prepare a large glass bowl. Pour sifted flour into it, also add butter and warm water. Then knead the dough – when the dough reaches the right consistency, transfer to the countertop, continue kneading, form a ball. Transfer to a bowl, cover (for example, a larger plate) and put it aside.
Start preparing the stuffing. Put it in a pan with fat, fry for a while and add finely chopped onion. Peel the potatoes, transfer to the water and wash, then grate on small meshes. Transfer to bacon and onions, stir. Add salt and pepper, fry until the water evaporates. Set aside to cool.
Transfer the dough to the countertop and roll it out. With the help of a glass, cut the circles, put the stuffing on their center and close, forming a frill. When they are all ready, put in the water and cook for a minute after sailing. Transfer to the roux or on a plate.
Also remember to sprinkle dumplings prepared in the meantime with a lard.
