You need to make this recipe:

  • 1.5 kg of chicken,
  • 300 g of rice,
  • 3-4 carrots,
  • 1 large red pepper,
  • 1 green cucumber,
  • 1 can of chickpeas,
  • 2 teaspoons of curry spice,
  • A bunch of parsley.

Marinade:

  • 3 chili piri piri peppers,
  • 2 cloves of garlic,
  • 2 tablespoons of sweet red pepper,
  • 2 tablespoons of rapeseed oil,
  • 1 tablespoon of sweet red smoked pepper,
  • 1 tablespoon of coriander grains,
  • 1 tablespoon of red wine vinegar,
  • half a tablespoon of salt,
  • Half a tablespoon of freshly ground black pepper.

Put the chicken on the board with your breasts down. Cut the meat along the spine on both sides. Spread the chicken flat. Divide the chicken into parts as you like. Wash the prepared meat and leave to dry.

In the meantime, prepare the marinade. Pour all ingredients into a bowl and blend to a smooth mass. The sharpness of the dish will depend on your preferences, so you can modify the marinade freely, but remember not to overdo it.

Rub the chicken parts thoroughly with the entire marinade and transfer to the container. Put the meat in the fridge overnight. The next day, an hour before the planned baking, remove the chicken from the fridge.

Heat the oven to 220 degrees Celsius. At this time, cook the rice according to the instructions on the packaging. Add a little oil and curry spice to the cooked rice.

Put the baking tray with baking paper and place the meat on it. Put the baking tray in the oven for 20 minutes. After this time, reduce the baking temperature to 200 degrees and turn the meat to the other side. Bake for another 40 minutes, watering the sauce from time to time. In the meantime, prepare a chickpea salad. Drain the chickpea can from the pickle and transfer to the bowl. Cut the paprika and peeled, green cucumber into small cubes.
