  • 1 large eggplant;
  • 2 eggs;
  • flour;
  • breadcrumbs;
  • canola oil;

Preparation method:

  1. Wash the eggplant and cut it into about 1 cm slices. They should be spread on baking paper and sprinkled with salt – thanks to which they will not be so bitter. After about 20-30 minutes, the eggplant should be thoroughly rinsed with water and dried with a paper towel.
  2. We salt and pepper eggplant slices from two sides.
  3. We take three cups and place in them separately flour, breadcrumbs and beaten eggs.
  4. We bread eggplant slices – first coat them in flour, then in the egg, and finally in breadcrumbs.
  5. Fry eggplant on two sides until they become golden and crunchy.

Eggplant cutlets You can serve in the form of a snack with garlic dip or tomato sauce. It is also a great idea to give them for dinner in the company of potatoes and your favorite salad.
