Galician schnitzel is a dish originating in the vicinity of the former Austrian partition, which is a mixture of Polish, Ukrainian, Austrian and Hungarian cuisine. Unlike the classic ground Delicate chicken meat is used here, and in the interior you will find cheese cubes melting in the mouth. The whole is aromatic and delicious – it will certainly appeal to all household members.
Ingredients:
- 600 g of chicken minced meat,
- 250 g of yellow cheese,
- Kajzerka,
- 2 yolks,
- 1/2 teaspoon of salt,
- 1/2 teaspoon of black pepper,
- 1/8 teaspoon nutmeg,
Additionally:
- rapeseed oil for frying,
- milk to soak a roll,
- Breadback roll.
Method of performance:
1) Soak the roll in milk and leave for about 30 minutes. Then squeeze it well and transfer to a large bowl.
2) Cut the cheese into very small cubes (the smaller the better). Add it to the soaked roll.
3) Add meat, yolks and spices to the bowl. Mix the whole until a homogeneous forming mass is obtained.
4) Heat a thin layer of oil in a frying pan, and the bread roll is pushed into a deep plate.
5) Form flat, round cutlets with hands wet in cold water. Make sure that the protruding pieces of cheese are pressed in the inside.
6) Bread the cutlets from all sides in breadcrumbs, and then put on hot fat. Fry them on low heat for 6-8 minutes on each side, for nice browning.
7) Put the ready Galician schnitzel on paper towels. Serve warm, with a light salad and starch.
