Opolanka salad is a simple pasta salad, full of taste despite a small number of ingredients. It goes well with grilled meats. It can also be used as an independent, light meal. You can easily pack it in a box to eat it at work during a lunch break. In its composition you will find not only pasta, but also tomatoes, peas or parsley. The whole is complemented by a velvet sauce based on Greek yogurt. For this reason, the snack is moist and full of taste.
Ingredients:
- 150 g of pasta (e.g. elbows),
- 2 tomatoes,
- 100 g of peas (frozen or canned),
- 100 g of yellow cheese (e.g. Edamski),
- several branches of parsley,
- a small clove of garlic,
- 2 tablespoons of mayonnaise,
- 2 tablespoons of Greek yogurt,
- a teaspoon of lemon juice,
- Salt, white pepper.
Method of performance:
Cook the pasta as described on the packaging. Strain and cool down.
Burn the tomatoes and cut into cubes. If they are very juicy, remove the seed nests from them (you can use them, for example, to prepare tomato soup).
Cook the peas until tender in salted water. If you use canned peas, strain it from the pickle. Combine with tomatoes in a large bowl.
Cut the cheese into small cubes. Finely chop parsley. Add cheese and parsley to peas with tomatoes. Put the pasta into the bowl.
Peel and squeeze garlic through Prague. Combine with mayonnaise, yogurt and lemon juice. Mix the sauce with other salad ingredients. Season with salt and pepper. Put in the fridge for 2-3 hours so that the flavors bite.
