The popularity of puff pastry in Czech women is rising. But most of them buy the dough, which will become more expensive in the finals. A puff pastry plate costs about thirty crowns. The frozen (and often more advantageous option) can be found for the same price, but it will never achieve the quality as it will give you a dough that you prepare at home. Try it and see that your efforts pay off. The homemade puff pastry is just better and it is obvious on the result.
The home is the best
Try a proven recipe according to the First Republic cook Marie Janků-Sandtner. How to do it: Sift 150 g of smooth flour on the roll and divide it into three pile. In one, process 150 g into pieces of sliced butter to create a stiffer patten that you will “rest” in the fridge. Add a pinch of salt, 1 yolk, 2 tablespoons of lemon juice (if you do not, if you do not, can use vinegar) and 3 tablespoons of lukewarm water. Do you have?
The processing of raw materials
Divine the dough for about 15 minutes to make it compact and supple. Then let it rest for about 10 minutes under the pan and divide it into two parts. Dust each of the buns with a little flour and roll it into a square. Remove the butter part of the dough from the fridge and do the same with it. Then put the dough on top of each other (beware of butter must be in the middle!) And roll on a pancake, which fold four times along the length and wrap it in dry and then in a damp cloth. Do you have? Let the puff pastry rest in the fridge for half an hour and then roll again. And you have the basis for the strudel. You will see that your cake will taste much better than using the product bought.
Fake puff pastry
If you are comfortable, you can also use a fake puff pastry recipe. How to do it: In a bowl, process 310 g smooth 250 g Hery, which you roughly grated on the grater. Then add 1 egg, 1 tablespoon of vinegar, ½ teaspoon of salt and water. With the addition of liquid ingredients, the dough can quickly “decipher”, so try to correct it with a knife to keep everyone together.
On cakes and salty strudels
For puff pastry, it is important not to heat up too much, so process it as quickly as possible. Then pour it with flour and roll it on a plate. And then it is just a question of how to use it. In sweet cakes, it is perfectly complemented by poppy, jam, whipped cream, cream or cottage cheese creams. It can also be processed into sweet trips, which you can fill with whipped cream or whipped white snow. The salty variant of leaf cakes is excellent with mushrooms, meat, vegetables of cheese or cream.
