Poultry rolls in bacon with the addition of apple and cider sauce is a real feast of flavors. A special sauce makes the meat extremely fragile, and thyme gives it a herbal aftertaste. This dish will be great for Sunday dinner or for special occasions, such as visiting guests.
To prepare six portions of this dish, you will need:
- 6 small single chicken breasts,
- 6 slices of smoked bacon,
- 100 ml of apple cider,
- 1 apple,
- 1 shallot,
- 2 tablespoons of butter,
- 1 tablespoon of brown sugar,
- 1 tablespoon of apple cider vinegar,
- 1.5 teaspoons of chopped thyme,
- ¾ teaspoon of salt,
- ½ teaspoon of black pepper,
- ½ teaspoon of smoked peppers,
- ½ teaspoon of granulated garlic,
- ½ teaspoon granulated onion.
You can serve ready -made rolls with potato purée, baked potatoes or fries. Light salad or vegetables baked in the oven will also work great here.
Mix all spices in a small bowl. If you do not have small breasts, cross -section of large pieces in half. Wash the chicken and dry with paper towels. Seriously, rub them with a mixture of spices from all sides. Wrap each of them with a slice of bacon. Heat a cast iron pan without fat on medium heat. Fry the whole rolls on each side for 8-10 minutes, and then place them in an ovenproof dish.
Remove the seed nest from the apple and cut them into narrow slices. Remove the bacon frying fat from the pan and dissolve the butter on it. Add finely chopped shallot and thyme. Fry the whole for 2-3 minutes, then pour in cider and add apples. Cook the whole for 2-3 minutes, for light reduction.
Pour vinegar, mix and cook for another minute. Pour the chicken sauce in an ovenproof dish. Place the apples on the sides. Put the dish in a furnace set at 180 degrees Celsius and bake it for 15 minutes, until nice browning. Serve chicken rolls in bacon, immediately after cooking, with the addition of baked apples, poured with cider sauce.
