How long has you been eating pork tongue for the last time? You may not attract this vision too much, but believe it is a food full of nutrients, tasty and also cheap.

While in the time before the November revolution there were guts with scarce and so -called divine goods, today we forget them, although their nutritional value is excellent. Likewise, they do not lag behind classical muscle and are a much cheaper raw material. Similarly, it is also with pork tongues that few can prepare well today. But we can boldly assign to such chefs when we cook a pork tongue with a boletus sauce.

Prepare raw materials

What do we need? Of course, in addition to the pork tongue itself (we will need two for four portions), we will also prepare dried mushrooms – in the season prefer fresh – onion, about 2 tablespoons of butter, smooth flour, a quarter of a liter of cooking cream, half a liter of meat broth, salt, pepper, nutmeg, cumin and lemon juice. But before we start magic with the sauce, we cook tongues in the water.

Cook tongues

Cook the pork tongue as much as any other meat, ie put it in a pot, pour approximately 1.5 liters of water, add bay leaf, garlic, pepper, salt and new spices. Who loves root vegetables can add it to the broth as well. Then it will only be enough to wait until the tongue is cooked. It may take even two hours, or even more, because it is one of the “most working” parts of the body, so they also correspond to the durable.

How best is to peel?

After cooking, put the languages ​​in cold water for a while to cool down quickly. It will be important because it is necessary to peel before further modification and especially serving. If we follow all the rules described, it is easy. As soon as it is done, we proceed to prepare the sauce. This will no longer be such a time -consuming part of the process.

The sauce is not complicated

Cut the onion and fry it in butter. Once it reaches the golden color, it will be the right time to add mushrooms. There will be a moment to rest until the mushroom softens, which is subsequently dusty with flour and pour over the broth from tongues. After good mixing and boiling, add the cream and season with the prepared spices. Then it will be enough to cook the sauce for a few minutes until thick, then drip everything with lemon juice. It’s done. Return the sliced ​​cooked tongues into the sauce for a while. Then add either dumplings or potatoes to the plate.
