Do you want to serve your guests something sweet, but you don’t necessarily want to bake a sponge cake or prepare a cream? Nothing is harmful, there are simpler options, exactly like we proposed pancake cake. Its preparation will take some time because you need a lot of pancakes, but it is a simple and pleasant recipe.
The finished pancake cake will certainly appeal to the youngest, but adults will also be coffee or tea.
To prepare this recipe, you need the following ingredients:
Pancakes:
- 500 g of wheat flour,
- 500 ml of milk,
- 500 ml of water,
- 6 eggs,
- 70 g of dissolved butter,
- 50 g of powdered sugar,
- A bit of salt.
Chocolate cream:
- 250 g cream 30%,
- 100 g Serka Mascarpone,
- 100 g of dessert chocolate,
- 100 g of soft butter,
- 20 g of powdered sugar,
- 20 g kakao.
Icing:
- 50 g dessert chocolate,
- 50 g milk chocolate,
- 2 tablespoons of butter,
- A large handful of nuts.
First, make and fry pancakes. In a large bowl, mix the flour, powdered sugar and salt. In a separate dish, beat the eggs, add milk and water, and then gradually pour into dry ingredients, stirring vigorously to avoid lumps. Add dissolved butter and mix until a uniform, liquid consistency. Leave for about 10 minutes.
After this time, heat a dry pan and fry thin pancakes of the same size. Put on a cooling plate. Repeat until the dough is over.
Prepare chocolate cream. First, break the chocolate into pieces, and then dissolve it in a water bath. Set aside to cool. Start the butter until it gets light and fluffy. Then add cocoa, powdered sugar, mascarpone and cooled chocolate. Mix briefly to combine the ingredients. Separately, beat the cream stiffly and mix it gently with the help of the spatula to the cream.
Make a coating now. Melt dessert and milk chocolate together with the butter in a saucepan on medium heat, stirring until a smooth coating.
Fold the pancake cake. Place the first pancake on a large flat plate and smear it with a thin layer of chocolate cream. Apply another pancake and repeat the action until you use all the ingredients. Finally, pour the prepared coating and decorate with nuts. Put the pancake cake in the fridge for a minimum of an hour.
