Lovers of Podlasie cuisine love this extremely filling dish. Kartacze is also becoming more and more popular in other regions of Poland – and it is not surprising at all, because they are simply delicious. Thanks to this recipe, you can easily make them at home. It is a bit time consuming, but we assure you that it is worth it.
Cake:
- 1 kg of boiled potatoes,
- 500 g of raw potatoes,
- 140 g of potato flour,
- 90 g of wheat flour,
- 50 ml of water,
- ¼ of the onion,
- 1 egg,
- 1 pinch of salt.
Stuffing:
- 250 g of pork shoulder,
- 250 g of the guild beef,
- 120 ml of meat broth,
- ½ onion,
- 2 cloves of garlic,
- 1 tablespoon of butter,
- ½ teaspoon of marjoram,
- 1 teaspoon of salt,
- 1 teaspoon of black pepper,
- ½ teaspoon granulated onion,
Additionally:
- Frying oil,
- Cooking salt.
Prepare the stuffing.
Cut the meat in medium -sized cubes. Season them with half of salt and pepper, as well as granulated onion and garlic squeezed by Prague.
Fry the meat in the oil until it is completely fried and golden on top. Set aside to cool.
Fry the finely chopped onion in the same pan. Set aside.
When the meat cools slightly, grind them in a meat grinder or crush it in a kitchen. Then add broth, onion and other spices.
Prepare the cake.
Put the cooked potatoes with a puree.
Place raw potatoes, onions and water in a blender or kitchen work and mix until a smooth consistency.
Spread the gauze on a strainer and pour a whole mixture of raw potatoes on it. Leave for a few minutes, then twist the gauze and squeeze most of the water. Add boiled potatoes, egg, salt and both types of flour. Mix to a smooth dough.
Fold the kartacze.
Take a handful of potato mass and flatten it on the cake. Place 1-2 tablespoons of meat stuffing in the middle-there must be a lot of it, but it can’t fall out.
Wrap the stuffing with dough and click the edges exactly. Several times hear the dumpling in her hands to close it completely. Put aside and repeat the activity for other ingredients. Boil salted water in a large pot. Put the kartacze on boiling water and cook for about 5 minutes. Take them out with a slotted spoon and serve immediately, poured with fat with fried onions or greaves.
