Crunchy coffee croissants. Very butter and fluffy

Croissants are the best coffee croissants – very butter, moist, with a stratified, and thus melting in the mouth, cakes. They can now be bought at most bread stands, but the most delicious are homemade ones. From the recipe below you will prepare 12 small croissants.

Ingredients:

  • 140 g of butter,
  • 5 g of fresh yeast,
  • 85 ml of lukewarm water,
  • 210 g of cake flour,
  • 2 tablespoons of fine sugar for baking,
  • 1.5 teaspoon of milk powder,
  • 3/4 teaspoon of salt,
  • yolk,
  • A tablespoon of milk.

Method of performance:

1) crush the yeast into the bowl. Add water and mix until the yeast is dissolved.

2) Melt in a saucepan 15 g butter. Cool

3) Sift flour into a large bowl. Add milk powder, sugar and salt. Combine with dry products with butter and water dissolved in water. Knead all the ingredients on a smooth dough.

4) Transfer the dough to a slightly greased bowl. Cover the bowl with a cotton cloth. Set aside in a warm place for an hour and a half. During this time, the dough should at least double the volume.

5) Knead the dough again. Put in a bowl, cover it with cling film and put in the fridge for about an hour. After this time, knead the dough again and put in the freezer for half an hour.

6) Roll out the chilled dough into a rectangle. Its longer side should be three times shorter.

7) Grate the rest (125 g) butter for down. Spread half in the middle of the dough rectangle (so as to cover 1/3). Fold the rectangular sides of the rectangle (covering the butter). The resulting square was turned 90 °, roll out into a long rectangle and fold it “into three”. Wrap the dough prepared in this way with cling film and put in the freezer for half an hour, and then in the fridge for an hour.

8) Roll out the dough into a long side rectangle, which is three times a short. Repeat the rolling described above, consuming the rest of the butter. Cool the dough, acting as before.

9) Divide the dough in half. Roll out each portion to a round cake on a flour -covered board. Divide the wheels like a pizza – each into 6 pieces. Roll the resulting triangles from the base towards the top and give them the shape of the croissants.

10) Put the oven baking tray with baking paper. Spread croissants on it. Cover with a cotton cloth. Set aside the baking tray in a warm place for an hour and a half.

11) Got the yolk with milk in a bowl. Spread them on the croissants with the help of a silicone brush.

12) Put the baking tray into the oven preheated to 220 ° C. Bake for 5 minutes. After this time, lower the oven temperature to 190 ° C. Bake for another 10 minutes.
