Under socialism, we were devouring primarily what was just available, including the liver. The liver and other viscera used to be much cheaper than muscle and definitely found a place in the diet of old and young, in ordinary homes, as well as in racing canteens and school kitchens. Because the structure and taste are substantially different from the LAG, not everyone came in handy and similar is an IS with a typical fragrance that is not absolutely pleasant to everyone.

But it is not just whether it was tasty or not. The consumption of offal and liver has been abandoned especially at a time when there was information that they were inappropriate for health. The liver is rich in protein, iron, zinc, copper and chrome, as well as vitamins of B or vitamin A, but this can be too much in the liver.

Liver and guts

Even meat used to be scarce goods and liver and other viscera can be very reasonably prepared in many ways a lot of interesting and today little seen meals. When was the last time you had spleen soup or chicken hearts?

Since the liver filters the blood of animals, there may be theoretically also heavy metals or residues of various drugs, including antibiotics. The liver of beef, pork and chicken are definitely interesting for the high content of many nutritional substances and it would be a shame not to use them. It means nothing more than that we should include them in the diet. But the temperance is definitely in place.
