Water kefir is a fermented drink that is created thanks to the work of bacterial and yeast cultures known as kefir grains. Unlike traditional kefir does not contain milkwhich makes him the perfect choice for vegans and people with lactose intolerance. Made based on water, sugar and flavor additives, such as fruit or citruses, the water kefir gains a characteristic slightly sparkling taste and consistency.

Preparation of water kefir at home is simple and only requires several basic ingredients:
- 1 liter of summer water,
- 2 tablespoons of kefir grains (also called Japanese crystals),
- 3-5 dried figs, apricots or a handful of smaller dried fruit, e.g. raisins or cranberries,
- 4 tablespoons of sugar.
Preparation:
- Rinse the crystals in cool water.
- Pour lukewarm, non -sore, boiled water into the dish and pour sugar. Mix with a wooden spoon to dissolve.
- Pour selected dried fruit and kefir grains. Cover the dish lightly with gauze and protect with a rubber band.
- Put the kefir in a warm, sunny place for 24-48 hours. The drink is ready when bubbles appear on top. Pour it through a strainer to clean dishes.
- Remove the crystals, rinse, dry and put in a jar of water and sugar. Store in the fridge (or immediately set another kefir).
You can store ready water kefir in the fridge for several days.
