For preparedand crunchy fries in the home version, You will need:

  • 10 large potatoes,
  • ½ tablespoons of salt.

Additionally:

  • 2 l of rapeseed oil for frying.

You can eat ready -made fries with salt, ketchup or prepare for them garlic sauce. Transfer four tablespoons of Greek yogurt into a bowl, two tablespoons of mayonnaise, two cloves of garlic squeezed through the press, add salt and pepper to taste, and two or three tablespoons of chopped dill or chives. Mix everything and it’s ready.

Peel the potatoes and cut them into bars about 1 cm thick. You can use a dedicated fries slicer. Transfer the potato bars into a large bowl and pour them with cold water. Upland them for at least 1 hour, and preferably leave them in the water overnight. The longer they get wet, the more crunchy they will be. Rinse the fries twice under cold, running water. Spread them evenly on paper towels or cloth. Dry as much as possible.

In a fryer or in a large pot with a thick bottom, heat the oil to 150 degrees Celsius. Place the fries on hot oil in 5-6 parts with a slotted spoon. Fry them for 5-6 minutes, then put it on a plate lined with paper towels. Increase the oil temperature to 200 degrees Celsius and put the fries again in batches. Fry them for about 5 minutes.

Take out the crunchy homemade fries with a slotted spoon and put them on on clean paper towels. Sprinkle with salt immediately. Serve the fries with the addition of ketchup or another favorite sauce.
