After potatoes, my children can beat up. Over the years of preparation, I have already drank a procedure to improve not only their taste but also color. Many times it happened to me that the results of my dances at the plate tasted good, but unfortunately they looked like a shoe sole. What did I forget?
Why peeled potatoes brown
The peeled potatoes darken in a moment. They turn black or at least turn brown. In terms of health, the blackening of potatoes does not mind anything, it is a common process of oxidation and it is harmless to our body. Only the starch that the potatoes is full responds to the air. So that the peeled potatoes do not look like coal in a moment, we put them in cold water, right?

Add lemon juice
But before I grate all the potatoes and make the dough, it happened to me that even a little brown. And all the more when I fryed him in a pan. So I learned to add a teaspoon of lemon juice to the dough. Its acidity helps potatoes to preserve their light, yellowish color. In other words, it significantly prevents oxidation. In addition, lemon juice has another benefit – finished potato pancakes are undoubtedly tastier.
But I advise to add a maximum of one teaspoon, not to overdo it, otherwise the taste of the lemon prevails over other tastes such as the marjoram and other spices.
I Smetana is a good helper
In addition to lemon juice, Smetana will do a similar service. Here it depends on what kind you choose. Adding the fatter you get a richer taste. The potato pancakes will be softer after frying. In any case, the cream also helps the breakdown of grated potatoes. But not as much as lemon juice.
