There are several varieties of rice appreciated in Portugal, such as the needle, arboreal, Carolino, Basmati, Integral, Wild, Vaporized, Red, Jasmine and Uruchimai, the latter widely used in sushi. However, it is estimated that there are more than 10,000 varieties around the world. Among them, there is a type that can be obtained in completely different ways.
Natural pink rice
Natural pink rice, known as “Rosa Marchetti”, is produced in some Italian regions, such as Lombardy. Its special coloration is due to the presence of algae or microorganisms that develop in rice areas when environmental conditions are favorable, such as high temperatures and low depth of water.
The pigments released by these microorganisms are absorbed by the grains, giving them a pink tone. These compounds, called anthocyanins, are also responsible for other shades, such as purple and red, depending on the pH of the environment. In addition to its distinct appearance, this rice is appreciated by its smooth taste and soft texture.
An innovative creation
On the other hand, scientists at Yonsei University in South Korea developed a synthetic version of this rice, which they called “hybrid rice.” The manufacturing process consists of coating grains with fish gelatin on a nanometric scale and later incorporating muscle and beef cells.
For the grains to get the desired composition, these are incubated at 37ºC over a period of one to two weeks. After this time, they are ready to be cooked and can be prepared in the microwave before consumption.
A sustainable alternative?
Researchers report that this hybrid rice has a higher carbon protein and hydrate content than traditional rice. Innovation aims to be a more sustainable alternative in environmental terms, helping to reduce carbon emissions associated with the beef industry.
Environmental impact and nutritional benefits
While the production of 100 grams of cow meat can generate up to 50 kilos of carbon dioxide, the production of equal amount of this synthetic rice emits less than 6.27 pounds. Fish gelatin plays a crucial role in the process, allowing beef cells to be fixed to grains.
Small nutritional differences
Scientists explain that the obtained rice has a slight increase of 0.3 grams of protein and 160 milligrams of carbohydrates per 100 grams compared to ordinary rice. This is due to the way carbohydrates interact with cellular components, delaying their decomposition.
A study published in the magazine “Matter” indicates that consuming 100 grams of this rice is, in nutritional terms, to ingest 100 grams of traditional rice accompanied by a gram of cow -breast meat. However, nutritionist Lia would warn that there are still not enough studies to determine the effects of regular consumption of this food.

In terms of flavor, researchers describe it as similar to conventional rice, but with a subtle grade of animal protein, resembling butter and almonds, as well as a slight fat brake.
Is it worth replacing traditional rice?
According to Lia Faria, pink rice has no significant nutritional differences from ordinary rice. Also, for those looking to increase protein consumption, the difference is unimportant, making this option not advantageous for this purpose.
Regarding weight loss, there seems to be advantages either, as caloric content is similar to that of traditional rice. However, the nutritionist admits that this product can help slightly reduce meat consumption and, consequently, minimize the ecological footprint associated with food.
Ethical questions and future perspectives
The use of beef cells raises ethical questions, especially among vegetarians and vegans. Nevertheless, scientists ensure that the process does not require the slaughter of animals to produce this rice.
At this time, the team is working on new variants, exploring the incorporation of cells of different species, including fish and other meats, in order to diversify supply according to consumer preferences. The goal is to make this rice available globally and at competitive prices.

According to, it is not yet possible to try the hybrid version, but for those who want to try the natural version of this rice, it is already possible to find it for sale in Portuguese supermarkets. On the continent, for example, pink casserole rice from Italy costs € 3.74.
