You need to prepare this recipe:
Cake:
- 370 g of wheat flour,
- 120 g of butter,
- 120 g cukru,
- 1 egg,
- 40 ml of water.
Filling:
- 250 ml of water
- 185 g of ground almonds,
- 40 g of cocoa powder,
- 80 g cukru,
- 30 g of wheat flour,
- half a lemon skin,
- ¼ teaspoon of cinnamon.
Additionally:
- Egg for spreading,
- Powder sugar for sprinkling.
Place the flour and butter in a kitchen work equipped with a blade and crush the whole until the consistency of wet sand.
Add sugar, egg and water. Mix until smooth and homogeneous dough. Cover them with cling film and put in the fridge overnight.
Prepare the filling.
Put the ground almonds, cocoa, water, sugar, grated lemon zest and water in the pot. Bring the whole to a boil and cook on low heat for about 10 minutes, stirring often.
Remove the filling from the heat and pour in the flour. Mix, then also cover with foil and put in the fridge overnight.
Prepare cookies.
Roll out the dough into a cake about 4 mm thick. Using a mold, cut circles with a diameter of about 12 cm. Alternatively, you can cut them with a knife into rectangles with dimensions of about 8×10 cm.
Apply 1-2 teaspoons of filling on each cake, and then stuff them in your fingers, in a way that resembles a sticking of dumplings.
Put the finished cookies on a baking tray lined with baking paper, and then smear them with a thinly laid egg. Bake them for about 15 minutes at 180 degrees Celsius.
Put the thistles to cool, and then sprinkle with powdered sugar.
