Eggs are a great idea for breakfast – many people can’t imagine a good, filling day without them. Today we have a different proposal than usual. Cowboy fried eggs They are great as a meal for family or friends. They are extremely delicious and aromatic, thanks to vegetables and spices.

The recipe is simple and the effect will definitely be tasty.

  • 9 slices of toasted bread,
  • 9 eggs,
  • 1 can (400 g) cut tomatoes,
  • 1 onion,
  • 2 red peppers,
  • 3 cloves of garlic,
  • 1 teaspoon of Roman cumin,
  • 1 teaspoon of sweet pepper,
  • 1 teaspoon of cayenne pepper,
  • salt, black pepper (to taste),
  • 1 tablespoon of olive oil,
  • parsley (for decoration).

Peel the onion and dice. Remove the seed nests from the peppers. Cut the pulp into pieces as onions into the same size. Peel the garlic and chop finely. Heat the oil in a frying pan. Fry the onion on it. Add the pepper and fry until tender. At the end of frying, add garlic.

Season the vegetables in the pan with cumin, sweet pepper, cayenne pepper, black pepper and salt. Add canned tomatoes. Sam the sauce for about 10 minutes – until the excess liquid evaporates from it.

Place toast bread on a baking tray lined with baking paper. Bake for 8 minutes in an oven preheated to 180 ° C. On bread bread, spread a thick layer of vegetables from the pan evenly.

In the middle of each toast, make a spoon of a cavity in a layer of vegetables. Stick a raw egg into them, being careful not to damage the yolks. Season the eggs with salt and pepper. Put the toast back into the oven. Bake for 20 minutes. Serve hot, sprinkled with chopped parsley.
