  • half a teaspoon of sweet smoked peppers,
  • half a teaspoon of ground hot pepper,
  • 2 juniper grains,
  • 2 cloves of garlic,
  • a few grains of black pepper,
  • 3 tablespoons of rapeseed oil.

Additionally:

  • several bay leaves,
  • 1 teaspoon of softening salt.

Prepare the marinade. In a mortar, grind all spices together with oil. Peel the garlic and squeeze through the press. Add to the marinade and mix thoroughly.

Wash and dry the neck with a paper towel. Rub with marinade. Place in an ovenproof dish, cover and insert into the fridge for a minimum of one night.

After this time, remove the meat, sprinkle with softening salt and cover with bay leaves. Put in the sleeve and close tightly. At the ends, make an incision with a sharp knife. Transfer the pork neck to an ovenproof dish.

Heat the oven to 200 degrees Celsius. Bake for about 90 minutes, in half the time, turn the meat to the other side.

Cool in the sleeve.
