Potatoes are one of the favorite vegetables of Poles. They are the basis of pies, grandmother or warming potatoes. So they cannot be missing in the kitchen. However, they will not always be safe to eat. Karolina Kowalczyk – dr inż. food technology and lecturer – he explains when vegetables can harm health.
Potatoes are vegetables that can be eaten all year round. In Poland, they are one of the most popular dinner additions. However, not everyone knows that even they can be dangerous to health. It is known that. They contain a lot of raw starch, which digestive enzymes will not be able to spread. In addition, the vegetables also contain glycalkaloids, i.e. natural toxins that lead to poisoning. Eating raw potato can end in unpleasant stomach ailments, vomiting and diarrhea.
Even children know that you can’t eat raw potatoes. More doubts arise when the question, Can you eat potatoes that germinate? Often, small rhizomes appear on ripe tubers. We instinctively cut them off, and cook and eat the chosen potato. Unfortunately, this is not the most reasonable solution. Nutrition technology – Karolina Kowalczyk – explains on his social profile that germinating potatoes are harmful to health:
The longer the potatoes lie, the greater the chance that they will start germinating. When the humidity and the temperature in the room where the vegetables are stored are higher, sprouts will appear on the tubers faster. As the specialist indicates, it is a sign that There are substances in potatoes that can harm health.
Can you eat potatoes that germinate? Dr. Kowalczyk says directly that it is not allowed. This is not the only problem with these vegetables. Potatoes can become green when the light reaches them. Rays stimulate the production of brineor toxic glycalid. Naturally, it protects the tubers from pests, but can also lead to acute food poisoning in humans. This is why green vegetable should not be consumed either.
What to do with the green part of the potato or protruding sprouts? Some people think that you only need to cut the shoots or cut off a piece of tuber. Nutrition technology does not agree with this:
Dr. Kowalczyk indicates that although cooking reduces the amount of brine, it is not completely. The expert recommends that – for her own safety – get rid of such potatoes and buy a new, fresh portion. In the future, it is also worth acting preventive – store vegetables in a dry, cool and darkened place to avoid germination and greenery.
