Salad with beetroot and orange for a slight dinner. It tastes best with a green sauce

Salad with beets and orange This is an original combination of various flavors. The baked pumpkin and beetroot acquire an interesting consistency and a distinct, sweet taste, which perfectly breaks slightly sour and juicy orange. Together with the addition of salty feta cheese, crunchy sunflower, and herbal sauce, they form a championship dish that will be an ideal appetizer, lunch or dinner.

Before you start preparing the salad, get the following ingredients

  • 2 medium beets,
  • 1 small pumpkin,
  • 1 large oranges,
  • 100 g Sera Feta,
  • 1 handful of sunflower seeds,
  • 1 teaspoon of cumin,
  • 1 teaspoon of oregano,
  • ½ teaspoon salt,
  • ½ teaspoon of black pepper.

Sos:

  • 50 ml of Greek yogurt,
  • 1 handful of fresh parsley,
  • a decent handful of basil,
  • 2 tablespoons of lemon juice,
  • 1 tablespoon of olive oil,
  • 1 clove of garlic,
  • ¼ teaspoon of salt,
  • 1 pinch of black pepper.

Additionally:

Serve the finished salad with a biagietka or herbal-masted croutons.

Beets and pumpkin sprinkle with a small amount of olive oil and bake in an oven focused on 180 degrees Celsius for about 30 minutes, turning them in the middle of baking. Beets should be wrapped in foil. After this time, remove the vegetables and leave them to cool.

Peel the beets and cut into a fairly thick semi -slices, and hollow the pumpkin with a spoon and cut the pulp into pieces of bite. Move the vegetables to a bowl and sprinkle with spices. Mix slightly. Peel the oranges and cut into smaller particles. Spread them evenly on vegetables, and place sunflower seeds in the middle of the salad.

Prepare the sauce. Place all ingredients in a kitchen or blender and blend to a smooth mass. Season to taste if necessary.

Spread the sauce evenly on a salad with beetroot and orange. On top, put a spoon of cream jester. Serve the salad immediately after preparation.
