From time to time, it is worth refreshing the rules that our grandmothers or mothers made on a daily basis. Even more so if they are based on several ingredients and are easy to prepare. What is Legumin and how to do it?

Danube waves, chocolate block or – are one of the most popular desserts from the PRL. Legumin is another delicacy that has gained great popularity at that time. Interestingly, The first mention of the dessert appeared at the turn of the 19th and 20th centuries. Many cookbooks contained the best recipes for legumes – at that time all kinds of flour -egg desserts were called, e.g. puddings, soufflés, pancakes, creams, but also characteristic sweets based on rice or fruit.

Before World War II, Legumin was served only as a dessert, but in the Polish People’s Republic it often became a sweet dinner dish. The famous legume was made only of a few ingredients. When the products were missing on the store shelves, simple to make sweetness became the only solution.

Today, the dessert is most often made of flour, eggs, semolina or millet. Thanks to this, it has a light, slightly creamy or foam structure. Various additions that reach him affect the taste and appearance of a sweet snack. Legumin is worth enriched with fruit (e.g. raspberries or strawberries), spices (including cinnamon) and sweet sauces (e.g. vanilla, chocolate, caramel). Rather, it is eaten hot, but in the form of a foam dough, it is usually served previously chilled.

Traditional legumes can be prepared from semolina. A great addition to it will be mild, but the vanilla sauce overclocking the taste of the dessert. A sweet delicacy from the PRL in this edition will come out light and more creamy.

Ingredients:

Vegetables:

  • 2 cups of 2% milk (approx. 500 ml),
  • 4 tablespoons of semolina,
  • a tablespoon of white sugar,
  • a tablespoon of vanilla sugar,

Vanilla sauce:

  • 200 ml of milk 2%,
  • 1/4 vanilla pods,
  • 4 yolks,
  • 3 tablespoons of sugar.

Method of performance:

Prepare vanilla sauce first. Boil the milk with vanilla pod (or scraped with grains inside), mix and remove from the burner. Separate yolks from proteins, transfer to a bowl and place it above a pot with boiling water (so -called water bath). Whip the yolk with sugar to a fluffy, light yellow mass. Stirring the mixture with a whisk all the time, gradually pour in warm milk with vanilla (previously remove the vanilla pod). Stir until the sauce thickens. Set aside for a moment.

Now make Legumin. Pour half a glass of milk into a small saucepan, add semolina and mix well. Pour the remaining milk (i.e. 1.5 cups) into a larger saucepan and boil (do not bring to intense boiling). Pour the soaked semolina and, stirring constantly, leave on fire a few minutes. At the end, add sugar and vanilla sugar. Mix thoroughly and remove from heat. Mix still warm porridge until it becomes fluffy and perfectly smooth. Transfer to salad bowls, pour vanilla sauce (possibly add fruit, e.g. raspberries, if you want) and eat immediately.

You can use various add -ons that will completely change the appearance and taste of the dessert. Wild strawberry, coffee or chocolate legumes are knownwhich is not difficult to prepare at all. During the Polish People’s Republic, a dessert was popular, which resembled a foam, several-layer dough with jelly and fruit. Semolina was not added to it, but eggs, butter and gelatin.

To do Strawberry legumin Prepare an egg, sugar, water and strawberry jelly. Melt the jelly in hot water (it should be less than written in the instructions). In a separate dish, grate eggs with sugar to a fluffy, light yellow mass. When the jelly is a bit concentrated, combine all ingredients, mix and transfer to cups. Put in the fridge for at least three hours. Decorate legumes with fresh fruit.

Maybe you prefer coffee dessert? Prepare wheat flour, eggs, milk, coffee and powdered sugar. First boil the flour with milk and add freshly brewed coffee. Cook for a while, stirring, then put the dish aside and mix again, every moment. In the meantime, separate yolks from proteins. Proteins beat to a stiff foam. Add yolks, powdered sugar and whipped proteins to the cooled mass. Transfer the whole to a greased butter or lined with baking paper and bake for about 30 minutes at 180 degrees. You can decorate with chocolate coating on top.
