The Hungarian stew variety is known for its intense taste, aromatic spices and warming properties. Ingredients:
- 3 sausages (e.g. Podwawelska, Toruńska or Silesia),
- 1 large onion,
- 1 pepper (red or yellow),
- 400 g of cooked chickpeas (or 1 can),
- 250 ml of tomato passage,
- 300 ml of vegetable or meat broth,
- 2 teaspoons of tomato concentrate,
- 1 teaspoon of dried garlic,
- 1.5 teaspoons of ground sweet pepper,
- ½ teaspoon of ground hot pepper (optional for a more spicy version),
- ½ teaspoon of dried lovage,
- 20 ml of olive oil,
- Salt and pepper to taste.
Preparation method:
- Fry the sausage – cut the sausage into slices and fry in a hot oil in a large pot until golden browned. Transfer to a plate.
- Frying vegetables – fry the diced onion and peppers in the same pan. After a few minutes, add garlic and spices (sweet, hot pepper, lovage) and fry for a while to bring out the aromas.
- Add chickpeas and tomatoes – add chickpeas, tomato passata and concentrate to the pot. Mix everything thoroughly.
- Stewing – pour the broth and cook on low heat for about 20 minutes, stirring occasionally.
- Add the sausage – after this time, put the fried sausage into the pot, season with salt and pepper as desired, and then cook for another 5 minutes so that the flavors combine well.
- Slow – serve hot stew, preferably with a slice of fresh bread or cooked potatoes.
