In the Czech Republic and Slovakia they eat yeast fritters – Livance. They are made of yeast dough, which is much thicker than pancake. That is why they come out more fluffy than. Everyone can handle the preparation of Livance – The recipe is very simple. However, we must be patient, because the yeast dough needs time to grow. So how do you make these pancakes?
Ingredients:
- 300 g of wheat flour;
- 450 ml of milk;
- 20 g yeast;
- 20 g cukru;
- 2 eggs;
- a pinch of salt;
- Frying oil.
Preparation:
To start with, mix yeast in a bowl, 1 tablespoon of wheat flour and 2 tablespoons of milk. Set aside the mass to rise for 15 minutes.
After this time, we separate the yolks from the proteins and combine them with the rest of the milk, and after a while we also add a solution and the remaining part of wheat flour, which we previously screen. Mix everything thoroughly.
In the next step, beat the proteins with sugar and a pinch of salt to a stiff foam. Then we gradually add it to the previously prepared mass.
Set aside the prepared dough to rise for 30 minutes to double the volume. After this time, we fry Czech pancakes until they are browned from both sides.
When we add solution and wheat flour, then we can also Add lemon zest, chopped apples, cinnamon, and even add a little rum. Thanks to this, Livance will gain an more intense aroma and more interesting taste, and the fruit will make them more moist and juicy.
Czech pancakes can be served with powdered sugar, sour cream, whipped cream and fresh fruit. They also taste great in an unusual version with cottage cheese and nuts.
