They are the secret addition that will make you dumb after the first bite.
Try this lubricant with a fresh baguette or bread until it will not be the last time you serve them to your family.
- 500 g of yellow shelled peas,
- 1 liter of hot water,
- 3 red onions,
- 50 ml of olive oil,
- 2 cloves of garlic,
- juice with 2 lemons,
- 2 tablespoons of fresh thyme,
- 1 teaspoon of salt,
- 1 teaspoon of black pepper.
Additionally:
- dill for sprinkling,
- red onion for sprinkling,
- Olive to Polania.
Pea Rinse thoroughly under running water.
Peel the onions and garlic, then chop finely.
Heat 2-3 tablespoons of olive oil in a large pot. Add onions, garlic and thyme. Fry the whole for a few minutes until the onion begins to caramelize.
Add peas, mix and pour the whole with warm water. Add the remaining olive oil and season the mixture to taste with salt and pepper.
Cover the pot with a lid and cook the whole on low heat for about 40-50 minutes, until the peas start to fall apart. When cooking, remove the formed scum on an ongoing basis.
Take the pot off the heat and pour in lemon juice.
Using a handball or blender Mix everything into a smooth puree.
Sandwich Serve the peas with a little olive oil and sprinkled with chopped onions and dill.
Store the dish in the fridge, in a tightly closed container. Use during the week. You can also freeze the lubricant for up to 3 months.
