Danube waves are a cake that perfectly balances sweetness with acidity. It combines a lot of textures, it is juicy, creamy and extremely delicious. Although it has been a bit forgotten today, it is definitely worth refreshing the tasty recipe.
Danube wave cake was the undisputed charm in the PRL. Its name probably comes from the shape of the dessert, i.e. beautiful waves, which create subsequent layers of baking. All thanks to cherries that load the mass, making wavy cavities appear in the layers. Dessert to A combination of a two -colored grown cake with juicy fruit, pudding filling and chocolate coating. Baking formerly made a sensation on name -day private parties, and today it will work even without an occasion.
Although cherries reigned in the dough from the Polish People’s Republic, there is nothing to prevent Use other fruits to make it (e.g. those made of compote, plums, raspberries or currants) that is at hand. In winter, when fresh fruit is missing, you can even spread fruit jam on the gritted dough.

How to make danube waves cake? The recipe is not complicated, but requires a bit of patience. First, you need to prepare two types of sprayed dough, then arrange a layer of cherry, make a pudding mass and chocolate coating. The dessert not only tastes very good, but also looks elegant – it can even replace a birthday cake.
Ingredients:
Cake:
- 3 eggs,
- 320 g of cake flour,
- 130 g cukru,
- 150 ml of oil,
- 150 ml of milk,
- 15 g of baking powder (one small package),
- 2 tablespoons of bitter cocoa,
- 2 tablespoons of milk 2%,
- compote cherries.
Pudding mass:
- 500 ml of milk 2%,
- 120 g cukru,
- 16 g of vanilla sugar (one small package),
- 2 tablespoons of wheat flour,
- 2 tablespoons of potato starch,
- 2 yolks,
- 250 g of margarine.
Chocolate coating:
- 200 g of dark chocolate (min. 64%),
- 4 tablespoons of milk 2%.
Method of performance:
Prepare the cake. Proteins separate from the yolks and beat to a stiff foam. At the end of mixing, add sugar to it gradually, and then yolks individually. Pour all oil slowly into the mass. Whip at medium speed to combine all ingredients. Sift flour into a separate bowl, pour vanilla sugar and baking powder, mix. Add dry ingredients to the mass of proteins and yolks – mix gently with a wooden spoon to get rid of any lumps. Divide the dough into two equal parts. Add cocoa and milk to one of them. Mix to connect.
Fold the cake. Prepare a 33 x 20 cm mold, put it with baking paper. Transfer the bright dough to the bottom, spread the entire surface of the baking tray. Then pour out the cocoa cake and also level the layer. Take the cherries out of the jar and strain. Place them evenly on a brown layer of dough.
Bake danube waves cake. Put the prepared one in the oven preheated to 180 degrees for about half an hour. At the end of this time, lead the so -called Dry stick test – stick a toothpick into the dough, if it is dry and non -ground, the bottom is ready. Remove baking and cool.
At that time Make a pudding mass. Pour 400 ml of milk into a saucepan and boil. Pour the rest of the milk into a separate dish and dissolve flour, potato starch, sugar and vanilla sugar in it. Stake the eggs and mix the ingredients well with a whisk. Pour the resulting mass into boiling milk. Keep on the burner to thicken. Then remove from the heat, cover with foil in contact and set aside to cool completely. Put the soft margarine into a bowl and beat to a fluffy mass. When the pudding is cool, remove the foil and add a spoonful of cooled pudding to the whipped margarine. Mix the ingredients to combine in askitty cream. Put the pudding mass onto the cooled danube waves, align and set aside.
At the end Prepare the topping. Break into the ankles, put in the pot. Pour in milk and heat until the chocolate does not dissolve and form a smooth topping. Set aside to cool slightly. Mix the cool and pour the waves of the Danube. Put the dough in the fridge, for at least a few hours, so that the topping and the other layers concentrate. Serve chilled.
