Salt suppresses bitterness
A strange idea, however, has its justification! As James Hoffman has told you, the salty taste suppresses the perception of bitterness, but at the same time makes coffee salty. That is why James decided to use a very small amount of already melted salt and drops.
So the salt can be felt in the coffee, even in very small quantities, but it can improve the taste of coffee in terms of bitter or too long -inflated coffee, which has bitterly bitter thanks to the way of preparation.
But it is not just a bitter taste that salt suppresses. At the same time, it increases the perception of sweetness and thanks to this, coffee may seem more pleasant or at least more interesting in all respects. Coffee with a very small amount of salt may come in handy especially if the preparation fails or if you want to imitate Scandinav, Turks, Vietnamese or Ethiopians. In Vietnam you can meet downright sweet salt coffee, which is used only a little salt, but also condensed milk.
In some countries, salt has got into coffee with water, which was drinkable, but in seaside areas rather brakická. In Scandinavia, salt is said to be added to the water if it is not rich in minerals. Otherwise, coffee would be faint.
What about us? Barists and lovers of good food and drink experiment with salt in coffee. However, it should be added that there is much more salt in our diet than healthy. Therefore, do not include such an experiment in the daily drinking regime.
