If you like jelly cakes, this dessert will be a great proposition for you. Baby cake They will love both adults and kids, it is delicious and light as a cloud.

Sponge cake:

  • 130 g of wheat flour,
  • 200 g cukru,
  • 6 eggs,
  • 1 tablespoon of lemon peel,
  • 1 tablespoon of lemon juice,
  • ½ teaspoon vanilla extract,
  • ½ teaspoon salt.

Foam layer:

  • 500 ml of milk,
  • 250 ml cream 36%,
  • 250 ml of Greek yogurt,
  • 100 g cukru,
  • 20 g of gelatin,
  • 5 tablespoons of water,
  • 2 tablespoons of honey,
  • 1 tablespoon of lemon juice,
  • ½ teaspoon vanilla extract.

Jelly layer:

  • 750 l of water,
  • 2 packages of peach jelly,
  • 2 peaches – fresh or canned.

Additionally:

  • Raspberry jam for spreading.

Prepare a sponge cake.

Sift the flour into a bowl with salt.

Proteins separate from the yolks. Whip the first with lemon juice to a stiff foam.

In a separate bowl, grate yolks with sugar and vanilla to obtain a light and fluffy consistency. Add flour and mix the whole.

Gently mix the protein foam with a wooden spatula.

Pour the dough into a 20×30 cm baking paper lined. Put them in the oven focused on 180 degrees Celsius and bake for about 35-40 minutes or for a dry stick.

Transfer the sponge cake to the checkered and leave to cool, and then move the bottom back to the baking tray. Brush it with a thin layer of raspberry jam.

Prepare a foam layer.

Mix lemon juice with cream and milk. Leave for 30 minutes.

Pour gelatin with hot water and set aside to swell. Then heat the mixture in the microwave.

Heat milk, cream, honey and sugar in a pot. Add vanilla and mix, do not boil.

Take the mass off the heat and add gelatin. Mix and set aside to cool.

Finally, add yogurt and put the whole thing in the fridge until it starts to solidify. Then pour the mass on the sponge cake and put the whole thing to cool.

Prepare a jelly mass.

Cut the fruit into small cubes.

Heat the water in a pot and add jelly. Do not boil.

Take the jelly off the heat and put in chopped fruit. Mix and set aside to cool.

Pour slightly solidifying jelly onto the already concentrated foam layer.

Baby cake Put in the fridge again until the concentration. Serve cold.
