Red cabbage is rich in vitamins A, C, K and some of the group B, as well as minerals, i.e. potassium, calcium and magnesium. In addition, it contains large amounts of fiber, and has little calories – 31 kcal in 100 g. It owes its purple color to anthocyanins, anti -inflammatory and anti -agricultural. It is worth making a salad, but also a purple soup that hardly anyone has heard of. Check a simple recipe for a delicious and healthy dinner dish.
Ingredients:
- 500 g of red cabbage;
- 3 potatoes;
- 3 carrots;
- 2 onions;
- 2 cloves of garlic;
- 1 l of vegetable broth;
- 100 ml of Greek yogurt;
- 2 tablespoons of oil;
- 1 teaspoon of lemon juice;
- Spices: 1 teaspoon cumin, 2 pinches of nutmeg, salt and pepper as desired.
Preparation:
To make red cabbage soup, you need to chop this vegetable at the beginning. Cut the potatoes and carrots into cubes, and chop the onions and garlic finely.
In the next step, start frying in a pot with hot oil onions, and when it is fracturing, add garlic. Fry it for a while.
Then add cabbage, carrots, potatoes and fry the whole for another 5 minutes, stirring occasionally. Then pour the broth and season with spices.
Cook the purple soup for about 25 minutes, until the vegetables are tender. Finally, blend it, get it with Greek yogurt and cut it with lemon juice.
In the above provision, we use spicy-spice and spicy nutmeg. Nothing prevents you from seasoning red cabbage soup with other spices, i.e. thyme, rosemary, sage, marjoram. However, if you prefer spices, you can add cloves and cinnamon.
Violet soup is best served with a crunchy baguette, garlic croutons or wholemeal bread. It is worth decorating it with a blot of Greek yogurt and sprinkled with puff peas, roasted sunflower seeds or herbs, i.e. dill, parsley or chives.
