Dumplings are among the treasures of European cuisine and are preparing a little differently in each region. While in our country they are popular potato or bread, in the area of Subcarpathian Ruthenia are made dumplings that are their taste and simplicity similar to pies. Whoever is tasted, usually does not return to the classic ones.
Dumplings from Subcarpathian Ruthenia is not a potato dough, as we might expect, but a simple mixture of flour, eggs and milk. Somewhere, a little butter is added to make the dumplings even more supple. The way of cooking also plays a big role – dumplings do not cook in classic salted water, but directly in milk, giving them an incredibly fine texture and a slightly sweet taste. As a result, they are fluffy and at the same time dense just enough to perfectly complement various dishes.

“Dumplings, like all good, need time. I say that because the raw materials for preparation should always have room temperature. So take them out of the fridge and pantry for sure an hour in advance before starting work,” advises chef Petr Kosiner.

Subcarpathian dumplings are perfect for sauces, stews or mushroom meals, but can also be served sweet, for example with plum jam, poppy and butter. In some families, they traditionally serve with fried onions or pieces of smoked meat, giving them an even more intense taste.
