The bottom of the dough:

  • 140 g of wheat flour,
  • 80 g of cold butter,
  • 45 g of dark cocoa,
  • 1 large egg,
  • a pinch of salt,
  • A bit of cold water.

Cheese mass:

  • 750 g of curd three times,
  • 150 g of fine sugar,
  • 4 large eggs,
  • 3 tablespoons of corn flour,
  • 1 teaspoon of vanilla extract.

Crumble:

  • 125 g of wheat flour,
  • 100 g of fine sugar,
  • 100 g of cold butter,
  • 1 tablespoon of dark cocoa,
  • 1 tablespoon of soluble coffee powder.

Prepare a cake tin with a diameter of 23 cm.

Place the flour, cocoa and salt sifted through a strainer in a bowl. Mix everything and then do a hole in the middle. Add cold butter chopped into small pieces and rub between your fingers. Pick up the egg into the bowl and pour a little water. Knead the mass into a smooth dough, sprinkling it if necessary with flour or adding water if it is too dry.

Form a ball from the mass, wrap it with cling film, and then put it in the fridge for half an hour. In the meantime, prepare the cheese mass. Place the cottage cheese in a mixer bowl and mix briefly so that it takes air and becomes fluffy. Place egg yolks, sugar, vanilla extract and sugar in a smaller bowl. Mix everything into a homogeneous mass. You can also do it by hand. Pour the finished mix into a bowl with cottage cheese and mix everything to combine the ingredients.

Beat egg whites with a little salt for stiff foam. Then add it to the cheese mass and gently mix with a spatula. Take the shortcrust pastry out of the fridge and roll it out so that a circle with a diameter is slightly larger than the cake tin. Put the dough with a baking tray, covering not only the bottom, but also creating a small edge. Pour the cheese mass onto the dough and level it.

Prepare the crumble. To do this, place flour, sugar, cocoa and coffee in a bowl. Mix everything thoroughly, then add chopped, cold butter and rub everything between your fingers to get lumps. Sprinkle the top of the cheesecake with such a crumble.

Bake the dough for 45-50 minutes in an oven preheated to 180 degrees Celsius. Watch that the top of the dough does not burn. After baking, leave the dough to cool.
