The imperial omelette, or Kaiserschmarren, comes from Austriawhere it is even inscribed on the list of traditional products. Although he is often eaten for dinner in Austria, he is a kind of dessert. It’s a sweet, thick and very fluffy cake that tears into pieces during frying. You can add raisins or almonds to the dough. The omelette is served with powdered sugar, with the addition of jam (traditionally plum). Apparently, the dish was one of the favorite delicacies of Emperor Franz Józef I. In German, Kaiser means the emperor, from where the name of the dessert probably came.
Ingredients:
- 125 g of wheat flour,
- 125 ml of milk,
- 3 eggs,
- 2 tablespoons of butter,
- a teaspoon of vanilla sugar,
- A small pinch of salt,
- icing sugar.
Additionally:
- Plum jam or apple mousse (at your discretion).
Method of performance:
Before preparing the omelette, remove the eggs from the fridge to get room temperature. You can also insulate them in warm water.
Pour the flour into a bowl, pour in milk and mix until a homogeneous mass is obtained. Then separate the protein from the yolks, and add the yolks to the flour mass obtained. Add vanilla sugar and mix everything again.
Beat proteins separately with a pinch of salt to a stiff foam. Add it to the mass with yolks and gently mix with a rod or spatula.
Melt a piece of butter in a frying pan. When it slightly sizzles, puff them and remove the foam. Spread the butter all over the pan and pour the mass on the omelette. Fry on low heat for about 5 minutes. After this time, turn it over to the other side. Do not worry if the omelette breaks down (it’s even advisable). Fry pieces of omelette until the raw dough is cut. Transfer the omelette to a plate, sprinkle with powdered sugar and serve with your favorite addition, such as plum jam or apple mousse.
