Baked dumplings of St. Jacka is a traditional dish of Podkarpackie cuisine, which is associated with the legend of the establishment of the Więkowa village. Jacek Odrowąż, a preacher and missionary traveling around Kiev Ruthenia – stopped in this town after his horse died. He met the newlyweds who drunk him but had nothing to feed. So he ordered them to grind wheat, add cottage cheese to it and stuff with cabbage and mushrooms. Residents were afraid that the mushrooms were poisonous, so they refused to add them. Jacek Odrowąż then ate raw mushrooms in front of them, which caused a lot of movement and hailed a miracle.

Dumplings were made, some were cooked and some were baked. The priest ate them along with the local community. Apparently, a bowl of this event has survived, and to this day in Podkarpacie Baked dumplings of St. Jacek is a regional special. They were even inscribed on the list of traditional products of the Podkarpackie Voivodeship. The dough in this dish is quite unusual, because apart from flour and water there is also white cheese, and the cabbage and gray stuffing with a hint of cumin is extremely delicate and moist.

Ingredients:

Cake:

  • 300 g of wheat flour,
  • 250 g of white cottage cheese,
  • 100 g of butter,
  • 1/2 teaspoon of salt.

Stuffing:

  • 1/4 of white cabbage,
  • 250 g mushrooms,
  • onion,
  • 1 tablespoon of flour
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 pinch of cumin

Method of performance:

Prepare the cake. Finely chop the butter with flour, in a similar way, which when preparing a shortcrust pastry. Add cheese and spices coarsed in your fingers. Knead the whole until a uniform and smooth dough. If it is too sticky, add a teaspoon of salt to achieve the right consistency. Form a round cake and wrap it with cling film. Put in the fridge for about 30 minutes.

Prepare the stuffing. Finely chop the cabbage and put in the pot. Pour it with water, salt and cook for 20-30 minutes until it is al dente. Strain and cool, then cut it into small cubes.

Finely chop the mushrooms and onions. Fry them in butter on low heat, to vitrify the onion and evaporate the entire fluid from the mushrooms. Sprinkle the contents of the pan with flour and add cabbage to it.

Season with salt, pepper and cumin. Mix and leave to cool completely.

Prepare dumplings. Form a round medium thick cake from the dough – it will be thicker than with traditional dumpling dough. You need to find the right thickness for your dumplings – the mass can not tear, and at the same time must be as thinnest as possible. Put the circles with a glass. Apply 1-2 tablespoons of stuffing on each of them. Guling the edges, and dumplings can be met on a baking tray from the oven lined with aluminum foil.
