João Sá’s Sála restaurant in Lisbon resumes the project “Sommelier Dinner Series” with an exclusive dinner entirely dedicated to the wine universe, which features the participation of Sommelière Maria Laura Vitor. In this edition, the wines again assume the lead role, accompanied by dishes created especially for the occasion, ensuring perfect harmonization. The event will take place next April 8th and will be an exclusive experience, limited to just nine guests, with an exceptional selection of eight wines.

The initiative was born in 2023 at the hands of chef João Sá, who now delivers the challenge to his sommelière, Maria Laura Vitor.

For this first edition of 2025, Sommelier Series have the partnership of Fermentation, and participants will be invited to explore the proposals in an irreverent, almost transgressive but always sensitive and vibrant way, as João Sá himself. This time, the focus will be on the French wines, with special emphasis on the Bourgogne region (Burgundy), in a remarkable selection of the Ponsot Domaine. The night begins with the Champagne Pierre Péters, known for its delicate effervescence and citrus notes, elegant and cheerful. Following is a Ponsot Adega wine parade, with some rarities that accompany the producer, such as Clos de La Roche 2007 or Morey Saint Dennis 1st Cru Crus of Montes Luisants Monopole 1998.

“It is always with great joy that chef João Sá creates these opportunities to stage the wines that also fall in love and complement him as a chef. These dinners are very special moments, they are like a ritual we seek to bring the greatest dignity, and we think they work better in an intimate record, as we are talking about wines that play deeply. I identify, and I think it deserves to be shared, ”says Sommelière Maria Laura Vitor.

Maria Laura Vitor, Algarvia de Gema, left Tavira at 27 and a career linked to sports to pursue her true passion for wines, moving to Lisbon to attend the scanning course.

He joined the first before the first Michelin star and is currently the main responsible for the wine list, which runs mainly to the national territory, covering virtually all regions of Portugal, with some international incursions. It is recognized for its uncommon and unexpected choices that transform the vinced experience at the table into a surprising moment.

This will undoubtedly be a memorable dinner, where wines and gastronomy meet to provide a truly unique sensory experience. There are only nine places available and the value of the experience is 260 euros.
