We associate the word “srokate” with something that has stains. In the case of these dumplings, it is probably about Cabbage and cottage cheesewhich really looks like it is spelled. For this, the taste of sokate dumplings are second to none. It is worth surprising their family.
The recipe for dumplings is from Podkarpacie and is a combination of Russian dumplings and those with cabbage. The milk from which cheese is made and undemanding cabbage were easily accessible and cheap products in this area. Surprisingly delicate stuffing comes out of this unusual combination. It is not as sour as of cabbage with mushrooms, but more expressive than in Russian dumplings. The cabbage for the stuffing is also cooked, which the stuffing owes its unique taste.
Srokate dumplings were treated in Podkarpacie as a fast dish, consumed during Lent. They can be eaten cooked or fried, with the addition of stewed onion and bacon shawl. The latter, however, will make the dish cease to be fast.

Cake ingredients:
- a kilo of wheat flour,
- 2 eggs,
- 2 tablespoons of oil,
- A glass of warm water.
Ingredients for stuffing:
- 1.5 kg of sauerkraut,
- 500 g of cottage cheese,
- Salt and pepper.
Method of performance:
Prepare the stuffing. Lightly rinse and squeeze the sauerkraut and cut it finely. Boil a liter of water in a pot and add cabbage, cook until soft (about 45 minutes). Strain the cooked cabbage and squeeze out of the water, then cool. Pass the cottage cheese and mix with cabbage, salt and fucking to taste.
Make dough for dumplings. Add eggs, oil and lukewarm water to the flour. The product is made to a smooth, flexible mass and roll out thinly on a flour -covered board. Cut the wheels in the rolled out dough, put in each stuffing and glue.
Put the dumplings into boiling, salted water. Wait for them to sail and cook for more 3 minutes.
You can serve dumplings with greaves, and if you want to avoid meat, serve with fried onion.
