This recipe comes from a family notebook – Grandma lemon cake It is delicious, always disappears quickly from the plates. For this you do not need great confectionery skills to prepare them. The refreshing taste of this dessert will make you repeat this recipe quickly.

Cake:

  • 300 g of wheat flour,
  • 200 g of cold butter,
  • 120 g sour cream 18%,
  • 4 tablespoons of sugar,
  • ½ teaspoon salt.

Filling:

  • 2 medium lemons,
  • 400 g cukru,
  • 4 eggs in size L or XL,
  • 1 large yolk,
  • ¼ teaspoon of salt.

Additionally:

  • 1 egg,
  • 1 teaspoon of water.

Prepare the cake.

In a kitchen work bowl, mix the flour, salt and sugar. Add butter and mix everything briefly until thick crumbs are formed.

Add cream and continue mixing until a smooth dough is created. Transfer them to the worktop and knead briefly. Divide them into two balls and wrap them tightly into cling film, and then put in the fridge for at least 60 minutes.

Prepare the filling.

Lemons cut lengthwise in half, then with a sharp knife into very thin slices. Alternatively, you can use mandoline. Remove all seeds.

Transfer slices of lemons to a glass bowl and sprinkle them with sugar. Cover the whole with cling film and leave at room temperature for at least 4 hours, preferably all night. Mix lemons several times during this process.

In a separate bowl, grate eggs with salt until a smooth consistency. Pour them into a mixture of lemons and sugar, then mix until the mass is consistent.

Fold the dough.

Remove one ball of dough and roll it out into a 30×30 cm cake. Put it in a 20×20 cm mold, lined with baking paper. Wrap the edges up.

Pour the lemon mass into the dough.

Roll out the second ball to a 30×30 cm cake and put on top of the lemon mass. The edges of the gulp.

Put the dough in the fridge for 45 minutes so that it cools down.
