Although we associate herring with other holidays, Herring salad for Easter may turn out to be a hit. It will be a surprising alternative to white sausages and dishes dripping with mayonnaise. This herring salad has Scandinavian origin, the Polish accent is pickled cucumbers in it. All ingredients perfectly combine equally healthy olive oil, which makes the dish light. The recipe for herring salad is very simple, several -year -old children will cope with its preparation.
Ingredients:
- 4 Matijas herring fillets;
- 4 hard -boiled eggs;
- 1 apple;
- 2 pickled cucumbers;
- 1 red onion;
- 2 tablespoons of chopped parsley;
- 3 tablespoons of oil;
- Lemon juice, salt and pepper to taste.
Preparation:
Rinse herring, dry with a paper towel and cut into particles. Cut the onions and cut the apple into particles without peeling it. Also cut cucumbers into slices and 3 eggs into larger cubes, and one into quarters.
In a bowl, mix the ingredients, add olive oil and lemon juice as well as salt and pepper to taste. If herring and cucumbers are salty, you don’t have to salt the salad. Mix the ingredients, put on a salad bowl and decorations with parsley chopped and egg quarters. Serve with bread.
