You can make a stuffing for Georgian dumplings with:
- 200 g of ground beef blade,
- 50 g of pork bacon,
- 150 ml of meat broth,
- 1 onion,
- 1-2 cloves of garlic,
- several branches of parsley,
- 1 teaspoon of dried fenugreek,
- ½ teaspoon of ground coriander grains,
- ½ teaspoon of Roman cumin,
- ½ teaspoon cayenne pepper,
- Salt, freshly ground pepper (to taste).
Sift flour through a strainer. Combine with salt. Gradually add water to the flour. Keep your dough with your hand all the time, adjusting its consistency with the amount of water. The dough is to be compact and quite hard, but flexible (it will not be completely smooth yet). Ready wrap with cling film and set aside for half an hour (at room temperature).
Finely chop the onion and parsley. Squeeze garlic through Prague. Combine minced meat from a shoulder, onion, garlic and parsley. Add spices: fenugreek, coriander, cumin, cayenne pepper, salt and pepper. Pour the broth (at room temperature) and mix all ingredients (the meat mass will have a rare consistency). Set aside for half an hour.
Make a cake again. After making it, it should be completely smooth (without lumps of flour).
Roll out the dough into a thick cake on a flour -covered board. Cut the rings from it (e.g. with a glass). Knead the rest and roll out again. Cut the rings until the dough is exhausted.
Roll out each of the discs into a thin pancake (about 15 cm in diameter). In turn, arrange the pancakes on the glass and lightly pus the dough inside to make the recess (thanks to this the stuffing will not dissolve). Apply a portion of stuffing to the hole and close the pancakes into tight pouches, sticking its edges “onto the tab”.
Put the dumplings in a pot with boiling, slightly salted water. Cook for about 10 minutes, making the dumplings not stick to the bottom. After cooking, harden with cold water.
