It is a dish that will be perfect especially for people who work a lot and need to eat solidly. Railway dumplings They will saturate and add energy for a long time.

Ingredients for stuffing:

  • 500 g of beef (e.g. ponder),
  • 1 carrot,
  • 1 small parsley,
  • a bit of broth,
  • Salt, ground pepper (to taste).

Cake ingredients:

  • 500 g of flour (type 450),
  • about 250 ml of hot water,
  • 50 g of soft butter,
  • half a teaspoon of salt.

Empire for lard:

  • 100 g of smoked bacon,
  • 1 large onion.

Prepare the dough for dumplings. Sift flour with salt to a large bowl. Gradually add hot water to it (it should have about 70-80 ° C) and butter. First mix the resulting dough with a spoon (so as not to burn), and finally knead with your hand. The dough cannot stick to your hands, but it should have a soft, smooth consistency.

Adjust it with the amount of water. Divide the finished dough into 2 portions and put it on for half an hour (wrap it in foil so that it does not dry out). Grind meat and vegetables with a broth with a meat machine through a small mesh strainer. Season to taste with salt and pepper. Add some broth (so that the stuffing is juicy, but keeps a compact consistency).

Prepare a lard for dumplings. Finely cut the bacon and fry in a pan. Add chopped onion and fry until golden browned.

On the flour -covered board, roll out a portion of the dough into a thin cake. With the help of a glass, cut the wheels from it. Place a small portion of stuffing on each and tightly stuck the edges. Knead again and roll out the dough that is left. In this way, use the whole cake and stuffing.

Put the ready dumplings in bars in salted boiling water. Cook for 2-3 minutes from the moment the dumplings flow to the surface of the water. Serve the drained dumplings with a bacon and onion.
