Salad of variety This is an ideal proposition for a light, colorful and vitamin meal. You can use any salad mix here, the connection will work well Rukoli, lambmies, iceberg lettuce and radicchio. Also add a few sweet cherry tomatoesfresh, crunchy cucumber. Pine nuts Not only are they pleasantly crunchy, but also are a source of healthy fatty acids, and B vitamins, vitamins E and K, as well as magnesium, zinc, phosphorus and iron. Such a salad will be not only tasty, but also very healthy.
To prepare this recipe, you will need:
- 1 handful of rocket
- 1 handful of lamb’s
- 4-5 ice or butter leaves (optional),
- ½ Radicchio head (or other red lettuce),
- 1 fresh cucumber,
- 1 handful of cherry tomatoes (or 2 medium tomatoes),
- 2 tablespoons of sunflower seeds or pine nuts,
- 1 tablespoon of olive oil,
- 1 teaspoon of lemon juice,
- Salt and freshly ground pepper to taste.
Rinse both types of lettuce under running water and dry in a centrifuge or with the help of a paper towel. Knead into smaller pieces and transfer to a large bowl. Cut the cucumbers into semi -slices, and cherry tomatoes into halves (or cut larger cubes). Add these vegetables to a bowl with a salad mix.
In a dry frying pan, lightly thin the pine nuts until slightly browned and smell. Then prepare the dressing. In a small bowl, mix olive oil, lemon juice, salt and pepper.
Mix everything. Pour the salad of various dressing just before serving, mix thoroughly and sprinkle with roasted pine nuts.
