Gibanica – Have you ever heard this name? Perhaps not, because this traditional dish straight from Slovenia is not particularly popular in our country. It is a pity, because the dessert looks special, and its taste is simply unforgettable. Maybe it is worth doing them this Christmas and surprising guests?

Gibanica cake It comes from the region Prekmurje – It became famous as a dessert served for special occasions. The history of this baking is long, the first changes about it appeared already in 1828. When priest Jožef Košič prepared a list of dishes popular in Precmurje.

The recipe for this dish changed over time. What is unchanged are many rich layers that, in combination, create an extremely tasty whole. Interestingly, the dough is registered as Guaranteed traditional specialty in the European Union. What does this mean? It can be sold under this name only, provided that it was prepared according to a traditional provision, also maintaining a specific order of layers, specific ingredients and fillings.

We know one thing – when you try once, it certainly won’t end with one piece.

Ingredients:

  • 1 pack of puff pastry.

Shortbread:

  • 200 g of whole grain flour (can be wheat),
  • 100 g of butter, 50 g of powdered sugar,
  • 1-2 teaspoons of cream 18%.

Poppy seed filling:

  • 300 g of finely ground poppy seeds,
  • 100 g cukru,
  • 1 packet of vanilla sugar.

Cheese filling:

  • 500 g of greasy cottage cheese,
  • 1 egg,
  • 50 g cukru,
  • 1 packet of vanilla sugar,
  • A pinch of salt.

Nut filling:

  • 200 g of walnuts,
  • 60 g of honey,
  • 1 packet of vanilla sugar,
  • 50 g breadcrumbs.

Apple filling:

  • 800 g apples,
  • 60 g of granulated sugar,
  • Half a teaspoon of ground cinnamon.

Additionally:

  • 100 g of butter,
  • 250 g of cream 30%,
  • 1 egg.

Knead the shortcrust pastry on a uniform ball. Cover with foil, put in the fridge for 40 minutes.

Prepare a bowl, mix in it ground poppy seeds, 100 g of sugar and a pack of vanilla sugar. In the second bowl, crush the cottage cheese with a fork, add eggs, 50 g of sugar and a pack of vanilla sugar and a pinch of salt. Mix the mass until it is smoothSo that you can easily spread it.

Prepare another bowl. Crush nuts, combine them with 60 g of honey and a pack of vanilla sugar.

Peel the apples and grate them on a thick grater – Transfer to the next bowl. Add sugar, breadcrumbs and cinnamon, then mix slightly. Cover that the apples are not brown.

Take the shortcrust pastry out of the fridge. Roll out them into the mold (preferably 24 × 24 cm in size). Prick the dough with a fork. Place in an oven preheated to 180 degrees Celsius, bake for 15 minutes.

Divide the puff pastry in half. Melt 100 g of butter in a saucepan. Beat the cream 30% with the egg.

Spread half the masses on the shortcrust pastry: poppy seed, cheese, nut and apple. Brush each of them gently with butter. Then pour the cream sauce. Place the puff pastry. Pour the cream sauce again and place all the layers of the remaining masses again, spread each of them with butter.

Place the puff pastry on top and pour part of the cream sauce again. All layers should be quite tightly connected. With the help of a wooden stick, prick them in several places.

Gibanica cake put in the oven (175 degrees Celsius), Bake for 50-60 minutes.
