Potatoes are one of the most versatile ingredients that can be prepared in countless ways. From baked, cooked, steamed to fries or porridge. Although potatoes are not so popular in southern Europe, their taste combines perfectly with local ingredients and can create unique and interesting combinations. One such inspirational variations are baked potatoes with FETA cheese and lemon, which combine traditional ingredients with a refreshing and distinctive touch of Mediterranean cuisine. Recipe for baked potatoes with feta cheese

Yellow potatoes are best suited for this recipe, which have a great texture and are beautifully crunchy after baking. You do not have to peel the potatoes if you like the peel, but if you prefer potatoes peeled, feel free to do it. You also need feta cheese. If you are vegani, make sure the selected cheese is suitable for you because not all brands offer it. You will also need garlic, lemon and olive oil for flavoring.

First wash the potatoes well, remove any dirt and cut them into cubes. Then place them in a baking bowl, add olive oil, spices (oregano, thyme, salt and pepper) and mix everything to cover the potatoes evenly. Put the feta cheese in the center of the bowl, add the sliced ​​lemon and the whole garlic clove. Finally, sprinkle everything with a little olive oil. Bake in the oven for about 45 to 55 minutes until the potatoes are soft and crunchy.

After about 25 minutes of baking, remove the garlic and allow it to cool for a while. Then peel it and crush it on the cutting board. As soon as the potatoes run out in the oven, gently crush the feta cheese using the wooden spoon, add the crushed garlic and fresh basil. Mix everything gently, sprinkle with fresh lemon juice and serve to taste. These potatoes are perfect for light salads or as a side dish to the main course.
