What basic ingredients do we need to make a pistachio grandmother? Here is the list:

Cake ingredients:

  • 280 g of cake flour;
  • 250 g of fine sugar;
  • 200 g cream 18 percent;
  • 150 g of soft butter;
  • 150 g of pistachio paste;
  • 5 eggs;
  • 1 teaspoon of baking soda;
  • 1 teaspoon of baking powder;
  • A pinch of salt.

Ingredients for icing:

  • 10 tablespoons of powdered sugar;
  • 3 tablespoons of warm water;
  • 2 teaspoons of freshly squeezed lemon juice.

To make a pistachio grandmother, at the beginning mix wheat flour, baking powder and baking soda in a bowl. In the second dish, mix butter with sugar to obtain a light, fluffy mass. Then We add pistachio paste And we combine the whole again with a mixer.

We do not stop mixing the pistachio mass and add 1 yolk to it, and then reduce the speed and add cream and add the flour mixed with powder and soda. A smooth dough without lumps must be created.

In the next step, beat the proteins into a stiff foam and mix half gently into the mass with a spatula. Then we do the same with the rest of the foam.

Pour the prepared dough into the mold into a cake, which we previously smear with butter and sprinkle with flour. We bake pistachio grandmother in an oven preheated to 180 degrees Celsius for about 55 minutes, to a dry stick. We cool this baking like a cheesecake – we leave it in the oven with ajar door.

Take the cooled dough onto the card and prepare the icing for it. For this purpose, mix water, powdered sugar and lemon juice until the pudding mass is created.

Finally, pour the pistachio grandmother with icing and decorate it with crushed pistachios. The dough is ready to serve after the white coating has solidified.
