If you like potato dishes, be sure to try this recipe. Here are Kurpie pancakes

Kurpie pancakes are a dish inspired by a region, or potato cake. From the ingredients from which this extraordinary regional specialty is formed, you can fry crunchy potato pancakes. You will need potatoes, onions, raw, smoked bacon and eggs. Be sure to add dried marjoramthanks to which the dish will take on a unique character. Remember to fry the pancakes in a heated pan, they will come out perfectly crunchy.

You will need: to prepare these pies:

• 1 kg of potatoes,
• 1 onion,
• 100 g of raw, smoked bacon,
• 1 egg,
• 1 teaspoon of marjoram,
• 1-2 tablespoons of wheat flour (optional),
• salt, pepper (to taste),
• vegetable oil (for frying).

Peel the potatoes and grate the grater on the medium mesh. Transfer to a colander placed above the bowl and squeeze excess water from the potatoes. Don’t pour it out. Transfer the potatoes to a sufficiently large dish. Wait until starch will settle at the bottom of the bowl. Pour water and add the starch back to the potatoes.

In the meantime, chop the onion and bacon finely. Fry the bacon in a pan. When the fat melts, add the onion (if the fat is not much, add some oil to the pan). Fry until the onion is browned. Cool

Connect the potatoes with the egg and the contents of the pan. Make a hand to a homogeneous mass. If you think that the mass is not firm enough and it will be difficult to form pancakes, add some flour. Season to taste with salt and pepper.

Heat oil in a frying pan (at medium burner power). Apply small portions of potato mass with a spoon, form round pancakes and fry until golden color – about 2 minutes on each side. Transfer fried pies into a paper towel so that it absorbs excess fat. Serve with a blot of cream or a favorite sauce based on yogurt.
