Are you looking for an idea for a quick, healthy and colorful meal? Pasta salad with vegetables and a delicate yogurt sauce It’s a hit. It works great as lunch, a light dinner or an addition to grilled dishes. You can also give it during family events, it will definitely taste everyone.
For the preparation of this pasta salads with yogurt sauceyou will need:
- 250 g of pasta (e.g. Świderka or Penne),
- 1 red pepper,
- 1 yellow pepper,
- ½ green cucumber,
- ½ small red onion,
- ½ cup of canned (drained) corn,
- 2 tablespoons of chopped parsley.
Ingredients for sauce:
- 150 g of natural yogurt,
- 1 tablespoon of mayonnaise (optional),
- 1 teaspoon of lemon juice,
- 1/2 teaspoon mustard,
- 1 clove of garlic squeezed by Prague,
- Salt and pepper to taste.
If you want this salad to be even more filling, you can add to it protein source. If you do not eat meat, it may be tofu Fried in olive oil in a pan. For example, it will also be great here canned tuna, hard -boiled egg, or fried or baked chicken breast diced.
Cook Al Dente pasta in salted water according to the instructions on the packaging. Drain and cool after cooking.
Cut the peppers into cubes, cucumbers into semi -slices (with skin), onions into thin feathers. Drain the corn, chop parsley.
Make a yogurt sauce. In a bowl, mix yogurt, mayonnaise, lemon juice, mustard, garlic and spices. Season to taste with salt and pepper.
In a large bowl, mix the pasta with vegetables, add the yogurt sauce and gently mix everything. If necessary, season with salt and pepper. It is worth cooling the pasta with yogurt sauce in the fridge for about 30 minutes before serving – then the flavors will bite the best.
